Jack Daniel's Old No. 7 is a Tennessee whiskey made in Lynchburg, Tennessee at 40% ABV, and the distinction between Tennessee whiskey and bourbon is the interesting part. Before it goes into the barrel, the spirit is filtered drop by drop through ten feet of sugar maple charcoal — the Lincoln County Process. That step, not the mash bill, is what makes it Tennessee whiskey.

What the charcoal does is strip out harsher compounds, which is why the whiskey arrives softer and sweeter than a comparably priced bourbon.
